Pico de Gallo is one of my all time favorite things to make. In the summer, when my garden is growing and the tomatoes and cilantro are fresh, I make it almost everyday. It is so refreshingly light and clean tasting, I love it! In the winter, I use the freshest ingredients that I can find at my local grocer. It brings the taste of summer into our cold, gray winter days.
The possibilities for Pico de Gallo are almost endless, I use it as a dip for tortillas, on salad, in a sandwich and as a side dish and more.
