My family loves carrots. We always have bags of regular, baby and rainbow carrots in our refrigerator. They are also our dog’s favorite snack. While they are delicious raw, I love cooking up a big bunch of carrots for dinner. Whenever I serve these glazed carrots, they are a huge hit with the little ones.
Super easy to make, this dish is a beautiful addition to any dinner table. Use rainbow carrots for a truly pretty side dish.

- 2 lbs carrots
- 3 Tbsp butter or butter subsitute
- 1/2 cup brown sugar
- 1 Tbsp salt
- 1 Tbsp parsley fresh, chopped

- Peel and wash carrots in cold water and drain.
- Place carrots in a sauté pan and cover with water. Add salt.
- Bring carrots to a boil and cook for 10-15 minutes, until just fork tender.
- Drain carrots, and set aside.
- In the same pan, melt the butter and add the brown sugar. Over medium heat, stir until the sugar is dissolved.
- Add the carrots back into the pan and gently stir, coating the carrots with the glaze.
- Garnish with fresh parsley if desired.
