This is a refreshing salad whenever you don’t want a heavy meal. In addition to loads of texture, this salad just bursts with flavor. Home made raspberry vinaigrette perfectly balances the combination of cranberry, apple, pear and blue cheese and makes this salad just right as a side salad or with a crunchy loaf of bread as a meal.

- 6-8 cups lettuce spring mix
- 1 pear cored, halved and thinly sliced
- 1 apple cored and diced
- 1 cup cranberries dried
- 1 cup pecans chopped
- 1/2 cup blue cheese crumbled, if desired. Omit if dairy free

- Arrange spring mix in a large shallow bowl.
- Slice pears in half and then make thin slices out of the halves.
- Arrange pears in the bowl.
- Mix cranberries, apples and pecans in a separate bowl and then sprinkle in the middle of the bowl.
- If desired, top with crumbled blue cheese.
