It is great to use with strawberries, raspberries and blueberries or any other dark colored fruits.
Use this berry glaze to coat berries prior to topping tarts or cakes. It can also be used as a foundation layer for fresh berries. For a foundation layer, brush or spoon the glaze on top of the cake where you want to place your berries. The glaze will give the berries something to stick to, and will also prevent them from sliding off the cake.

- 3 tbsp cornstarch
- 1/2 cup sugar granulated
- 1 cup berry blend crushed, your choice
- 2-4 drops food coloring (optional) use vegan food coloring if vegetarian

- If you would like your glaze to be smooth, process berries in a blender or food processor. If you prefer a chunkier glaze, crush them with a fork.
- To remove unwanted seeds, securely attach a cheesecloth to a small bowl with a rubber band then filter processed berries through the cheesecloth. This takes some time, but will result in a clearer glaze.
- Food coloring is optional, but will give your glaze a deeper, brighter color.
- In a small saucepan, combine all ingredients.
- Over medium-low heat, stir continuously until the ingredients have combined and begin to thicken.
- Remove from heat and store in a refrigerated, airtight, plastic container.
- If you need to thin out the glaze before use, add 1 tsp of warm water at a time until the glaze reaches the desired consistency.
