Chocolate Pecan Truffles
Creamy chocolate and salty pecans. Simply delicious. This is a simple recipe, so it is important to use a good quality chocolate.

Ingredients

  1. Chop up chocolate bar into small pieces and place in a bowl.
  2. Add sea salt to chocolate.
  3. In a small saucepan, bring heavy cream to a boil. Once boiling, remove it from heat immediately. Add maple syrup and stir to combine.
  4. Pour cream mixture over chocolate and salt. Do not stir! Leave the hot cream sit for ten minutes to gently melt the chocolate without stirring. If you stir the mixture to quickly, the chocolate may become grainy.
  5. Stir the mixture until well incorporated, smooth and shiny.
  6. Refrigerate the bowl until the mixture is hardened, about two hours.
  7. Once the chocolate mixture is hardened, remove from the refrigerator. Scrape the chocolate, one tablespoon at a time.
  8. Place pecan half in the middle of each tablespoon and roll into a ball.
  9. Roll in chopped pecans to coat.
  10. Refrigerate completed truffles until firm.
  11. Store truffles in a refrigerated airtight container until needed.
