I love simple and basic recipes. This recipe is truly a workhorse in my kitchen. Whenever I have leftover vegetables, I will make this pilaf the next day and throw them in. The kids love to sprinkle grated cheese on the top of their rice pilaf. Depending on what else we are having for dinner, I may add garlic powder and soy sauce and if we are looking for something sweeter, we add golden raisins with just a touch of orange zest.
Adding chopped sauteed mushrooms to the recipe will make a very filling delicious pilaf. When your pilaf is finished, toss some slivered almonds, chopped pistachios, pecans or walnuts on top for a crunchy finish.
There are endless flavor combination possibilities for rice pilaf. It is easy to make and always looks fancier than regular rice. My family always think I worked extra hard on dinner when we have pilaf. You can usually find this dish on our holiday tables because it is so beautiful.

- 2 tbsp olive oil
- 1 cup yellow onion
- 1/2 cup red pepper diced (about 1/2 cup)
- 1 tsp salt
- bay leaf
- 1 1/2 cup rice I used basmati rice
- 3 cup vegetable stock
- 1/2 cup carrots diced
- 3 tbsp parsley chopped

- Preheat oven to 350º.
- In a sauté pan add the olive oil, when the oil is hot add the onion. Cook for about 5 minutes on medium heat until the onion is translucent.
- Add the red pepper and carrots and cook for another 5 minutes.
- Place rice in a colander and rinse the rice under running water until the water runs clear to remove any excess starch.
- Add the rice to the onion and peppers and then pour rice mixture into a casserole dish and spread evenly over the bottom of the dish.
- In a saucepan, combine the vegetable stock, salt and bay leaf and bring to a boil, cook for 5 minutes.
- Add the stock to the casserole dish and stir well. Once mixed, make sure the rice mixture is spread evenly over the bottom of the casserole dish. Cover the casserole dish.
- Cook rice for 35 minutes.
- Remove bay leaf and garnish with chopped parsley.
